It’s the Kielbasa Kid…

…and I hope you had a great Easter Weekend. This year everyone came to my house for dinner. I love to cook but I never cook during the holidays. That’s the wife’s job but somehow, I found myself in the middle of cooking the ham, baking the asparagus, making the Cole slaw, macaroni salad, baked beans and 3 bean salad which I made the night before. I was going to make scalloped potatoes but ending up with macaroni salad after my short cut in making the casserole ended when my attempt to boil the potatoes slices to soften them up a bit before baking ended up being too soft and my short cut will now be used for mashed potatoes or potato pancakes, depending on how adventurous I feel this week. My wife did make the deviled eggs and put a relish tray of pickles olives and pepperoncini together but is now complaining about all the dishes that she has to clean up. I said look on the bright side. Unlike past holiday meals at least this year you didn’t have to prepare and then clean up the mess too. For some reason my logic didn’t change her mood.
